Although Japanese cuisine is known for its focus on fish and meat, options for vegans and vegetarians are limited compared to other places. However, Tokyo and other cities in Japan are determined to prove that their prestigious cuisine can also satisfy those who do not consume meat.
The Tokyo government has organized seminars for restaurateurs and sent experts to establishments to help introduce alternatives to basic ingredients such as dried fish flakes or pork stock. The city offers subsidies for obtaining vegetarian restaurant certificates and has two chefs specializing in meat-free food who act as “tourist ambassadors.” These efforts seek to expand the gastronomic offer and make vegan and vegetarian restaurants more accessible to visitors.
However, some restaurateurs have reservations and find making vegan dishes difficult. The lack of knowledge about vegetarians and vegans in Japan makes it difficult to understand their needs and preferences. In addition, some fear that a separate kitchen is required or that they must follow strict rules, similar to those for halal or kosher food. While Japan has a tradition of Buddhist vegetarian cuisine served primarily in temples and specialty restaurants, being vegetarian remains a challenge in today’s society. Although there have been improvements in recent years, with some regular restaurants including a vegetarian dish or two on their menus, there is still some way to go for Tokyo to become as culturally diverse as New York or London. Despite the limitations, efforts to expand vegetarian and vegan options in Japanese cuisine continue, and those seeking a meat-free dining experience have more and more options available.
